Easy Tuna Pasta

1 onion, chopped

1 head broccoli, chopped

1 red or yellow pepper, chopped

1 tablespoon balsamic vinegar

1 tablespoon capers

1 can tuna

1 lemon juice and flesh

1/2 teaspoon ground pepper, to taste

2 tablespoons mayonnaise

shells pasta , for two


Heat the water for the pasta.

Fry the onion in a small amount of oil.

Add the broccoli and pepper and fry gently.

Add the balsamic vinegar and capers, and gently heat.

Once the water has boiled for the pasta, pour a teaspoon of oil in, then add salt and pasta. Stir and leave to cook for about 10-15 minutes. Drain.

Add tuna, lemon juice and some of the flesh to the onion mixture.

Heat very gently until the pasta is cooked. Do not over-stir as the tuna will turn to pulp.

Add pepper.

Combine pasta and tuna mixture.

Add mayonnaise and stir with a wooden spoon.
